Eel blood is poisonous

Eel blood contains a poison called ichthyohaemotoxin.
It is not a strong poison that can kill, but if it gets into a wound, it causes inflammation and festering, and if it gets into the mouth, it causes nausea and breathing difficulties.
However, in our restaurant, Kabayaki is steamed before grilling and then grilled more thoroughly before serving, so it is safe.
